Before COVID-19 came along, my family and I would visit the grocery store up to 3-4 times a week! This was the way we eliminated unnecessary waste, and had fresh fruits and vegetables for all to enjoy. Boy, have times changed! Like many of you reading this, we now are limiting trips to the grocery store as much as possible. Because of this, we are relying on pantry staples more than ever before.

While fresh is best, pantry staples can provide a surprisingly nourishing, and tasty meal packed full of anti-inflammatory, and mood boosting vitamins and nutrients. These quick and easy salmon burgers with slaw provide a hefty dose of Omega-3 fatty acids. In studies, Omega-3 fatty acids have been shown to demonstrate significant consequences on immune system homeostasis, and show a therapeutic effect on mood disorders such as depression.

I made these salmon burgers with the help of my kids this week. My kids loved forming the patties with their little hands, and I loved that fact that a healthy, home cooked meal was on the table in 20 minutes. I made the recipe even easier by using a bag of organic broccoli slaw instead of shredding a head of cabbage as the recipe suggests. While the recipe calls for fresh herbs, dried herbs works just as well.  Just make sure you use about half the amount.
